Cheesy dip with olive oil and paprika in a stainless steel bowl

SMOKY CHEESE DIP

Equipment

  • 1 medium saucepan

Ingredients
  

  • 1 tsp olive oil
  • 2 tsp garlic
  • 1/2 tsp red pepper flakes
  • 1/2 pint cherry tomatoes
  • ~1/2 cup cottage cheese, blended (works best with Good Culture brand)
  • 1/2 tsp smoked paprika

Instructions
 

  • Heat olive oil in a sauce pan over medium heat and sauté garlic and red pepper flakes until fragrant.
  • Add tomato halves and cook until tender, a few minutes.
  • Then, turn off the heat and allow the pan to cool a bit. If your pan is too hot when you add the cottage cheese, you may see it get clumpy and watery. Don’t panic if this happens, it’s still edible, just not as great of a texture.
  • Blend the cottage cheese (optional) until creamy and add to pan along with smoked paprika and salt.
  • Top with olive oil and extra paprika.
  • Serve with crackers, or if you’re feral like me, just eat it with a spoon 😉

Notes

*This recipe is VERY forgiving and you don’t need to be exact- def eyeball it if you want to make your life easier!
