Mexican inspired brunch, topped with cilantro and cheese in a large pan

EGGS BENAVIDES

Y’all they are damn good. Here’s what ya need 👇🏻

Equipment

  • 1 medium saucepan

Ingredients
  

  • 1 tbsp olive oil
  • 1/2 onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 10 oz can fire roasted diced tomatoes + green chiles
  • 15 oz enchilada sauce (we use Siete Foods)
  • 5-6 eggs
  • 1 jalapeño
  • tortillas
  • chopped cilantro
  • cotija cheese

Instructions
 

  • Sauté the onion and bell pepper in olive oil for about five minutes, add onion and sauté until fragrant.
  • Add the tomatoes and enchilada sauce, simmering until it thickens. Create holes in the sauce and crack eggs into them. Cover the pan and cook until the eggs are done to your preference.
  • Top with cilantro, cotija, and jalapeños and serve on warm tortillas! Sprinkle with some fresh lime juice if you like. Enjoy!
