BREAKFAST CASSEROLE WITH POTATO CRUST

shredded potatoes (about 4 cups)

turkey sausage, browned

yellow onion

red bell pepper

garlic cloves

cumin

turmeric

celery salt

tsp
pepper

tbsp
chili powder
Instructions
Mix two eggs with shredded potatoes and press into baking pan, forming a crust
Bake crust at 450 until crisp (about 25 mins)
Meanwhile, saute chopped onion and bell pepper until cooked through
Add garlic and saute until fragrant
Combine 10 eggs in a bowl and whisk with seasonings of choice
Remove cooked crust from the oven and add sausage, onion, bell pepper, and eggs
If desired, top with tomatoes
Turn the oven down to 400 and bake until the middle is firm, about 20 minutes
