TURKEY LETTUCE CUPS WITH MANGO PICO
A light and refreshing meal- serve warm or chilled for the perfect leftover lunch!

For the filling:
- 1 TBS avocado oil
- 2 Tsp minced garlic
- 2 Lbs ground turkey
- 2 Tsp sesame oil
- 2 TBS coconut aminos or soy sauce
- 2 Large carrots grated (about 1 C)
- 1 Head of butter lettuce or your favorite type of lettuce
For the Pico
- 2 mangos
- 2 red bell pepper
- 1/2 Red onion
- 1/2 bunch of cilantro chopped (about 1/2 C)
Ginger Lime Vinaigrette
- Juice of 2 limes about 1/4 C
- 1/4 C avocado oil
- 1 TBS honey
- 2 tsp grated ginger can also sub for squeeze ginger
In a large pan, heat avocado oil and sauté garlic.
When garlic is fragrant, add ground turkey.
While the Turkey is cooking, dice all ingredients for the pico and mix in a medium sized bowl.
When the turkey is almost finished cooking, add the sesame oil, coconut aminos, and grated ginger and mix to combine. Allow turkey to finish cooking.
Make the vinaigrette by pouring all ingredients into a jar and shaking up.
Fill cups with about 2 spoonfuls of the filling, 1 spoonful of pico, and a drizzle of vinaigrette.
These can be served warm or chilled and make fantastic leftovers! Serve with rice to balance out the meal.
