Chocolate, peanut butter, and I go waaayyy back. It’s my favorite combo for a sweet treat in any form: a cookie, peanut butter cup, or ice cream… I love it all. So naturally, I wanted to create a healthy chocolate peanut butter dessert option, and these have been the perfect solution! These simple 4 ingredients come together for the perfect combo of sweet, creamy, and nutty!
When I’m making a “healthier” dessert option, two things I don’t sacrifice on is flavor and satisfaction factor. Too often when we’re subbing the real deal desserts for a lighter option, we end up feeling deprived, which can lead to overeating later on. This makes sense! The whole reason we pick up a dessert is to be satisfied! But if we opted for a lackluster, tasteless healthy option, the satisfaction misses us entirely. Which can then lead to us eating even more in search of satisfaction that will never come.
This is why so many people send the message to just “eat the real thing”. But the good news is, when you have a healthier dessert that is also tasty, you get the best of both worlds!
What makes these stand out is using protein powder to both thicken and sweeten the peanut butter base. Most recipes use flour and honey (or sugar), but I wanted a healthier touch! This gives you about 5-6 grams of protein per bite! It might not be as much as a protein bar, but this simple swap will still help keep you fuller for longer and be more friendly on the blood sugar!
If you really wanna set these bites over the edge, finishing them off with some Maldon Sea Salt flakes is the key. I know you’ll love these as much as I do!
Chocolate Peanut Butter Bites
Creamy, chocolatey, and higher in protein. The sweet treat you'll always want to have on hand!
1/4 C Vanilla Protein PowderI use Clean Simple Eats
Topping:
1/2CChocolate chips (90g)
1 tspcoconut oil
1PinchMaldon SaltFor topping
Instructions
Line a 7×5 inch dish with parchment paper. If you don't have this exact size, a similar size will work fine! The thickness of the bites just might be slightly different.
Add the peanut butter and protein powder to a bowl and stir until combined.
Press the peanut butter mixture into the prepared dish and distribute evenly.
Melt the chocolate over a double broiler and and 1 tsp of coconut oil. I make a makeshift double broiler using the same glass or stainless bowl I mixed the peanut butter in set on top of a small sauce pan with water. Alternatively, you can melt the chocolate in a microwave safe bowl.
Pour the chocolate mixture over the peanut butter mixture and place in the fridge or freezer to set.
After the chocolate has cooled a little bit, top with maldon flake salt.
Return to the fridge or freezer to continue cooling the dish. Before it is completely frozen, remove from the freezer and slice into 16 bite size pieces.
Can be stored in the fridge, but I love them as a frozen treat!
