If you haven’t tried the Maya Kaimal simmer sauces yet, you’re in for a treat. Their delicious sauces bring you all the flavors of Indian cuisine with none of the prep time.
One of my favorite things about this recipe is how customizable it is. You can sub the beef for chicken or cooked lentils and use eggplant, broccoli, or anything you have on hand for the vegetable. Sometimes I will even add in chopped potatoes to simmer with everything in place of a side of rice.
However you choose to customize, the flavors in these sauces always come through!
MADRAS BEEF & CAULIFLOWER
This one is just 5 ingredients and maybeee 5 minutes of prep time!
- 1 whole Onion, diced (You can also buy pre-chopped from the produce aisle)
- 1 lb ground meat I’m using ground beef with organ meats from @forceofnaturemeats for some extra nutrition, but it’s great with turkey too!
- 1 jar madras curry simmer sauce from Maya Kaimal Foods
- 1 bag frozen cauliflower
- 1 bag instant rice
Heat a large skillet over medium heat and add ground beef. Cook until brown, about 7-10 minutes. Add chopped onion and sautéed until translucent, about 5 minutes. Add frozen cauliflower and simmer sauce. Fill the empty simmer sauce jar with a bit of water and shake to get every last drop of the goodness
Simmer until cauliflower is tender and easily pierced with a fork, about 15 minutes.
For a starch, I love to use leftover rice when I have it. But if I don’t have any on hand, I’ll reach for a bag of instant rice. I don’t love microwaving in plastic, so I transfer the instant rice to a bowl and microwave for the recommended cook time- always comes out great!
TO CUSTOMIZE:
My favorite thing about this meal is how easy it is to switch it up. I’m always using different meats, veggies (zucchini is great with this!), and different flavored simmer sauces from Maya kaimal! You can also throw some diced potatoes in with the vegetables instead of rice.
