One of my favorite restaurants here in Fort Worth, Texas serves a brussels sprout salad that is to die for. Naturally, I had to do my best to recreate it and to be honest, this at home version more than rivals the real thing.
It’s the perfect salad for meal prep because the brussels sprouts are hardy and won’t get soggy with dressing. It also makes a great meal to drop off for new moms or friends going through a hard time.
BRUSSELS SPROUT SALAD
If you’ve been following me for a bit, you know this recipe is low in carbs for me. I like to serve it with some whole grains crackers on the side to make up for it!
- 1/4 cup champagne vinegar
- 1 tbsp honey
- 1 tbsp dijon mustard
- 2 tbsp lemon juice
- 1/4 cup olive oil
- 1 lb brussels sprouts (can buy pre-shredded)
- rotisserie chicken (I used the breast meat from one bird)
- 5-6 strips of bacon
- 3/4 pint cherry tomatoes
- 1/3 cup marcona almonds
- several slices of manchego cheese, parmesan, or other favorite (truffle cheese would be SO good)
- Salt & Pepper
Shred the Brussels in a food processor, roughly chop the marcona almonds, and combine the rest of the ingredients in a salad bowl. Toss with dressing and enjoy!
