If you grew up in Texas, you can probably relate to the chokehold Tex Mex breakfasts have on us. Breakfast tacos, migas, chilaquiles… we love them all. A shortage of ingredients one morning led to this dish and we’ve been adding it to the Tex Mex rotation ever since. Naturally, we call this Mexican inspired Shakshuka-like dish Eggs Benavides. Great on its own or as stuffing for breakfast tacos, the smoky, rich flavors in this dish will up level your weekend brunch game!

EGGS BENAVIDES
Y’all they are damn good. Here’s what ya need 👇🏻
- 1 tbsp olive oil
- 1/2 onion, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 10 oz can fire roasted diced tomatoes + green chiles
- 15 oz enchilada sauce (we use Siete Foods)
- 5-6 eggs
- 1 jalapeño
- tortillas
- chopped cilantro
- cotija cheese
Sauté the onion and bell pepper in olive oil for about five minutes, add onion and sauté until fragrant.
Add the tomatoes and enchilada sauce, simmering until it thickens. Create holes in the sauce and crack eggs into them. Cover the pan and cook until the eggs are done to your preference.
Top with cilantro, cotija, and jalapeños and serve on warm tortillas! Sprinkle with some fresh lime juice if you like. Enjoy!
