A couple of years ago, we stumbled into a cute little restaurant in Telluride and I had the BEST breakfast bowl. It was savory, packed with veggies, and egg free. Now don’t get me wrong, I’m a big fan of eggs, but every once and a while, do you ever just get the egg ick? Tell me I’m not alone here!! Naturally, I had to recreate these bowls immediately!
My typical egg free breakfast end up on the sweet side: overnight oats, greek yogurt and granola, smoothies, etc.). So having a high protein, egg-free free breakfast bowl that also happens to be savory has been clutch. And if you don’t happen to be burnt out on eggs right now, topping this with a fried egg is next level!
The recipe calls for an ancient grain blend, which I typically find at sprouts or central market. If you can’t get your hands on that, wild rice works too! I also love playing around with which veggies I use here. I love the recipe as is, but also find it works well with whatever veggies I have leftover that week. And if all else fails, the grain and sausage mixture is great on a bed of arugula.
Savory Ancient Grain Breakfast Bowl
A hearty egg free breakfast packed full of nutrients and flavor
- 1 pint cherry tomatoes
- 3-4 Medium zucchinis
- 1.5 tsp fresh time, chopped
- 2 tsp fresh rosemary, chopped
- 1 tbsp olive oil
- 16 oz bone broth
- 1/2 C ancient gran blend (wild rice works too)
- 1/2 C lentils
- 1 tbs butter
- 1 shallot, thinly sliced
- 1 tsp chili pepper flakes
- 8 oz mushrooms, sliced
- 16 oz turkey breakfast sausage
- 4 oz goat cheese
Preheat oven to 415 degrees. Combine tomatoes, chopped zucchini, herbs, and cloves on a baking sheet. Toss in olive oil and bake for 15 min, or until cooked through.
Bring broth to a boil and add grains and lentils. Reduce to a simmer and cook until grains are ready (about 20 min)
Sauté shallot in butter until translucent and browning, about 4 min. Add chili pepper, then mushrooms and sauté until mushrooms have reduced in size, about five minutes. Add breakfast sausage and brown until crispy. Deglaze the pan with broth if needed.
Add cooked veggies Turkey sausage mixture, along with grain blend (proportions to taste- you may end up with some leftover grains for later in the week) top with goat cheese and enjoy!
